Hello and thanks for visiting with me! I'm what most people would say would be a "native" of Florida. While not "officially" born here I have lived in Orlando all but a few years of my wonderful life. I love spontaneous adventures, cooking, learning and exploring new things. In my blog I will share many of these experiences with you and hope that you will enjoy them too! As an enthusiast for everything photography I decided to do what I love and love what I do after working in the corporate world for much of my life. My love for travel and people inspired me to take a once hobby and make lemons into lemonade as we would say here in the south. My style of shooting uses natural light, is relaxed and photojournalistic in nature and is meant to portray, in the images captured, the beauty of "Living, Laughing and Loving Life".

Moist Blueberry Muffins with a TWIST!

So my husband is a big muffin fanatic these days it seems.  Being from England he likes his breads and pastries.  Over there traditionally it's a love of scones but over here I think it's more about the muffin.  With our newly renovated kitchen I have found myself starting to bake more.

After a quick, and yes, failed attempt at a less than moist blueberry muffin I began my search.  I recalled a recipe I made often growing up that I thought I'd give a try but added a little bit of my own twist.  I got the thumbs up so I felt it be worthy of sharing this recipe.  The TWIST...It's made with a box of cereal!


  • 12 ounce box of Special K Fruit & Yogurt
  • 3 cups of flour
  • 3 tsp. of baking soda
  • 1 tsp. of salt
  • 3 eggs
  • 5 ounces of vegetable oil
  • 2 1/2 cups of buttermilk
  • 1 cup of sugar
  • 1 pint of fresh blueberries
Grease your muffin tin and bake at 400 degrees for 20 - 25 minutes.
Yields 12 jumbo or 24 regular sized muffins.

Tip: To make buttermilk from regular milk add 1 tablespoon of distilled vinegar for each cup and let stand for 5 minutes.

You can use a regular box of Special K flakes if you prefer.

Simple, easy and tasty too!  I hope you enjoy them.

  1. Deanna, This is an AWESOME recipe! I made these today. Delicious. We could not stop eating them. I used whole wheat flour which made them turn out with a beautiful dark brown color (no, I didn't burn them :)). Thank you for sharing this great recipe!! Laura
